Meer over Pastry stout
What's in it?
The brewer starts with a strong, dark base beer and adds culinary ingredients. Lactose often goes in: milk sugar that the yeast doesn't ferment, so the beer stays sweet and full-bodied. Avoiding lactose? In the EU it counts as the allergen milk; check the label on each beer.
Less sweet and more roasted? Look at the imperial stouts. You can read where the name 'pastry' comes from in the Beer School on pastry stout.
Serving
According to the Brewers Association, you drink it best as a digestif, at the end of the meal.
